One of the great pleasures I have is getting to invite an array of Soldiers and Servicemembers over to my home for a home cooked meal. When Heather and I were in Kansas this was a Tuesday night tradition as single Soldiers and one Soldier waiting for his wife to arrive came for a healthy meal of my creation. Things became a game of sorts when I began challenging myself to make healthier versions of some of my and their favorite foods. This dish was born out of that. While I am still trying to perfect it, I believe it is a great alternative to the highly fatty and greasy version for which I got its inspiration. Ladies and Gentlemen I give you the Philly Chicken Cheese Steak Casserole.
Ingredients
4 Chicken Breasts (or one per person)
6 oz Whole Wheat Egg Noodles
1 Green Bell Pepper
1 Red Bell Pepper
1 Medium size Onion
8 oz sliced mushrooms (optional)
1/4 cup /Low Fat Cream Cheese
1/4 cup Low Fat Sour Cream
1/2 cup Low Fat Mozzerella Cheese
2 TBSP Olive Oil
Salt and Pepper to taste
Preparation:
Bake Chicken until cooked through or reaches internal temperature of 170 degrees. Prepare Egg Noodles according to package directions. Slice peppers and onions into strips about 1/8 of inch wide. In large skillet saute onions and peppers in olive oil until soft. While cooking, add pinch of salt and pepper and stir often. Add Mushrooms and allow to soften as well.
When noodles are done cooking, drain and return to pot. add cream cheese and sour cream and stir until smooth. (I think the next time I make this I will be adding a little skim milk in order to make the sauce a little thinner.) Next, stir in the chicken and the Mozzerella Cheese. Plate and top with generous helping of peppers and onions.

Thoughts: Heather says that this tastes like stir fry colliding with Chicken Alfredo. I guess that can be good or bad. Personally, I believe this recipe is still a work in progress as I would like to get the sauce a little creamier without adding a bunch of fat. There is also a chance that I would add some cheddar cheese to this for a little different flavor. I hope some of you will make this and will play with the recipe and provide some feedback so that it can get better. Right now it is a 6 out of 10, but with a little help could be a part of the permanent repertoire.
