Day 11: That is the Goat's Cheese


Steve:  WE'RE BACK!!!  Just want to say one more Happy Birthday to my love Heather.  Yesterday, was a lot of fun.  We ate breakfast at Denny's, Lunch at Firehouse Subs, Dinner at Bizarro's and had ice cream at Marble Slab.  Most of it was free for her birthday which was excellent.  Gotta love free food you don't have to cook or clean up.

Day 11 Ingredient:  Goat Cheese


I love goat cheese.  It's one of those ingredients that most people crinkle their nose at because they haven't tried it and they think it's weird because it comes from a goat, but the tang and flavor is just awesome. 

One of the things I love to do with goat cheese is stuff it into meats.  I have done that with chicken and flank steak more times than I can count.  One time I had a vegetarian over for dinner and I stuffed goat cheese into the leaves of a head of romaine lettuce.  It was great.  


Today, I wanted to keep it simple though and do something that wouldn't be that expected.  I think I succeeded at surprising Heather and creating a new lunch that will be around for years to come.

Day 11 Ingredients

1 oz Goat Cheese
2 Slices Whole Wheat Bread
1 Large Tomato Slice
1 Slice Colby Jack Cheese
TBSP Parmesan Cheese
TSP Oregano


Instructions

1. Heat skillet over medium heat.

2.  Build sandwich in this order.  1 slice of bread, colby-jack cheese, goat cheese, tomato, oregano, Parmesan cheese, 1 slice of bread.

3.  Spray pan with non stick spray and add sandwich to skillet.

4.  Cook for 2-4 minutes or until cheese starts to melt and side 1 is browned.  Turn and brown side 2, another 2-4 minutes.  Remove and serve.

Day 11 Meal: Goat Cheese, Triple Cheese, Grilled Cheese Sandwich


I love a regular American Cheese, grilled cheese as much as the next guy, but a gourmet grilled cheese can be great too.  For this sandwich the flavors worked perfectly.  The creaminess of the goat cheese with the juicyness of the tomato, and the crunch of the bread proved to be a flavor and texture bonanza.  I really think I hit the jackpot with this sandwich.  I think it would even be good with a slice of ham if anyone has a problem not eating meat.

Don't get me wrong this was a great sandwich, but I ranked the creativity at 3 stars because I know what he's done with goat cheese in the past. I, too love goat cheese! It's so delicious and I agree with Steve that it worked perfectly with the tomato. This meal was perfect for a day after overeating a bunch of junk over the weekend. This will probably be a new favorite in the Schmitt house! Maybe it can be paired with soup in the fall.
