Day 14: Tequila!!!!

Steve:  So last Saturday we celebrated Heather's birthday with a pink party, and I made pink drinks to go with the theme.  2 of the pink drinks were a Watermelon Margarita and a Cherry Margarita.  They were good, but I didn't use the whole bottle of Tequila despite my best efforts.  I think the leftover bottle sitting on the liquor cabinet gave Heather an idea that might stump me.  Yeah, it didn't!

Day 14 Ingredient: Tequila

Ok, so I want to hear everyone's tequila stories.  I would share mine but I am afraid that I might not have some friends anymore after those are shared.  I am not a huge tequila fan, but every once in a while a margarita can be fun.  I didn't drink my creations at the party though.  I stuck to beer.

My approach to the ingredient was inspired by two sources.  First, I remembered winning a Rum Cake back in 1981 at little league baseball opening day.  My thought was that if I could put rum in a cake, then I could put Tequila in a cake too.  I didn't think a tequila flavored cake would be very appetizing though.  So I thought about it, and I remembered this Mountain Dew cake my cousin Angela made one year.  It was awesome.  No, I didn't make a Mountain Dew and Tequila cake. (That does sound good though)

Instead, I thought about the Cherry Margarita from Saturday night.  I had my inspiration.

Ingredients:

Cake:
1/4 cup Tequila
1/4 cup Lime Juice
1/8 Cup Triple Sec
2/3 cup Cherry 7 Up
Vanilla Box Cake Mix
1/2 cup Vegetable Oil
4 Eggs (not pictured, I forgot)
2 boxes of 1.5 Oz Sugar Free Vanilla Jello

Glaze:
1 Cup Powdered Sugar
1 TBSP Tequila
2 TBSP Cherry 7 Up (may need more for proper consistency)

Instructions:

1.  Preheat Oven to 350 degrees.  Spray 10 inch Bundt pan with cooking spray.

2.  Combine all cake ingredients in mixer and mix on medium speed for 60-90 seconds or until everything is well combined.  Dish into Bundt Pan and Bake for 40-50 minutes or until toothpick inserted into center of cake comes out clean.

3.  For glaze mix all ingredients in a small bowl.  Remove Cake from bundt pan upside down onto cake plate and pour glaze on top evenly.

4.  Allow cake to cool before serving.


Day 14 Dessert: Cherry Margarita Cake


Steve:  Yeah, this is good.  Gonna go eat another piece now.  Nothing else to say about that!!!

Yep it was good!! It deserves 5 stars across the board. I think Steve adapted this recipe very well by using the Soda cake recipe. The texture and consistently were perfect and you could taste the tequila. I especially enjoyed the crusty top, it was full of flavor! Delicious!
