Going FOWL - Day 7

As promised, it is the end of week one and I weighed myself this morning.  It was at 269.6.  I wonder if I can lose some while eating some Fowl.

Today's dish gets its inspiration from an old Ruby Tuesday menu item from the 1990's.  It wasn't on the menu very long when I worked there, but I can remember a lot of people getting the low-fat Baked Potato and Salad Bar combo.  I used to recommend a side of grilled chicken to go with it for a little protein.  This dish is very easy

Ingredients:

1 Baked Potato
1 to 2 cups of steamed mixed veggies (I used Carrots, Broccoli, Cauliflower and Zucchini)
1/2 cup Spaghetti Sauce
1 Chicken Breast
1 TBSP Parmesan Cheese

Poke Potato with fork several times.  Bake Potato at 350 degrees until tender.  This will take 50 minutes to an hour or more.  Saute chicken breast in pan until cooked through or internal temperature is 170 degrees.  Steam or microwave veggies until desired tenderness. 

Split Potato and pinch ends to open.  Top with veggies, sauce, chicken and cheese.  Enjoy.

Thoughts:  This is a great meal that can be heavy or light really depending on the size of the potato you choose.  In reality I should have chosen a lot smaller potato for both Heather and I, because neither of us could finish the whole meals.  It is one of the easiest meals to make, so I think you would like it.  I give it an 8 out of 10.
